It saw the light of day during the pandemic, when Hugo Candeias, fresh from many years working in Spain, applied his skills to making a cheese tart known as Basque - even though it didn't originate there - and which became popular around the world from San Sebastián-Donostia. Well-toasted in its thin caramelized crust, but surprisingly creamy on the inside, the recipe won over loyal customers during its first year as the dessert of choice at the Ofício. In 2022, Dona by Hugo Candeias was born, inspired by the Basque name Donostia, to allow orders of whole pies, which could be consumed by diners in their own homes, via the Volup app, or with take-away orders at collection points.
